Crispy Bacon Muffins Recipe

As promised to @nathanrt, here is the recipe for Crispy Bacon Muffins, the recipe is taken from 1 Mix, 50 Muffins.

Crispy Bacon Muffins

Ingredients

Makes 12

  • oil or melted butter for greasing (if using)
  • 250g rindless, smoked streaky bacon
  • 6 tbsp sunflower oil
  • 1 onion, finely chopped
  • 280g plain white flour
  • 1 tbsp baking powder
  • 1/8 tsp salt
  • pinch of pepper
  • 2 medium eggs
  • 250ml milk

Recipe

  1. Preheat the oven to 200oC, grease a 12 cup muffin tin or line with 12 paper cases. Chop the bacon, reserving 3 rashers to garnish. Cut each reserved rasher into four pieces and set aside.
  2. Fry the onion for 2 minutes, add the chopped bacon and fry for 5 minutes until crispy. Remove from heat and leave to cool.
  3. Sift together the flour, baking powder, salt and pepper into a large bowl.
  4. lightly beat the eggs in a large jug or bowl then beat in the milk and oil.Make a well in the middle of the dry ingredients and add the beaten liquid ingredients and bacon. stir gently until just combined; do not over mix, there will probably be some bits of flour left, that’s fine.
  5. Spoon the mixture into the prepared muffin tin. Place one of the reserved pieces of bacon on top of each muffin. Bake in the over fro 20 minutes until well risen, golden brown and firm to the touch,
  6. Leave the muffins to cool for 5 minutes then server warm.
